- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 large potato, cubed
- 3 carrots, sliced
- 8 oz button mushrooms
- 4 cups chicken broth (or vegetable broth for a vegan option)
- 4 oz. Mama Kicks Gochujang sauce
- 1 lb cubed cooked chicken breast (or tofu)
- Chopped green onion for garnish
Sauté onions for 5 minutes, then add garlic and sauté for 1 more minute.
Add potato, carrots, broth and Mama Kicks Gochujang sauce and bring to a boil. Reduce heat and simmer uncovered for 10 minutes.
Add mushrooms and chicken and simmer for 5 more minutes.
Taste the soup and add more Mama Kicks Gochujang sauce to your desired taste.
Serve garnished with green onions and ENJOY! 🍜
