Ingredients:
4 cups mixed fall veggies (sweet potato, carrots, parsnips, Brussels sprouts)
3 tbsp olive oil
2 tbsp Mama Kicks Jerk Marinade
Salt & pepper to taste
Lime wedges (optional, for serving)
Method:
Prep: Preheat oven to 425°F. Cut veggies into similar-sized chunks for even roasting.
Coat evenly: In a large bowl, toss veggies with oil, Jerk Marinade, salt, and pepper until every piece is coated. Let sit 10 min for more flavor.
Roast: Spread in a single layer on a lined baking sheet. Roast 25–30 min, flipping halfway.
Check doneness: Veggies should be tender inside, crisp at edges.
Serve: With a squeeze of lime for brightness.
