Herby Chimichurri Flatbread (homemade)

Serves: 4

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • ¾ cup warm water
  • 2 tbsp olive oil
  • 1 tbsp fresh herbs (parsley, oregano, or thyme), chopped

Topping

  • 3 tbsp Mama Kicks Chimichurri Sauce
  • 1 cup mushrooms, sliced
  • ½ cup mozzarella or feta
  • Handful arugula (optional)

Method:

  1. Make the dough: Combine flour, baking powder, salt, water, oil, and herbs. Knead 2–3 min until smooth. Rest 10–15 min.
  2. Cook the bread: Divide into 4, roll out thin, and cook in a hot skillet 1–2 min per side until golden spots form. Keep warm.
  3. Assemble: Preheat oven to 400°F. Spread Chimichurri Sauce, then add mushrooms + cheese.
  4. Bake: 8–10 min until edges crisp and cheese melts.
  5. Finish: Garnish with arugula or an extra drizzle of chimichurri.
